Ktipiti (Tirokafteri)

Ktipiti, tirokafteri or kopanisti is a delicious Greek meze (appetizer) prepared with feta cheese and roasted red bell peppers.

Ingredients
- 1 red bell pepper
- ½ lb feta , crushed with a fork
- 4 tablespoons Greek yogurt (sheep's milk)
- 1 clove garlic , degermed
- ¼ teaspoon paprika
- 2 sprigs Dill , finely chopped
- ¼ teaspoon oregano
- 3 leaves mint , chopped
- 3 tablespoons olive oil
- Juice of half a lemon
- salt
- pepper

Instructions
- Roast the bell pepper over a flame or in the oven until the skin is blistered.
- Place it in a container with an airtight lid or in a freezer bag and allow to cool.
- Once the pepper is cold, peel, seed, finely chop with a knife and drain well in a colander.
- Crush the garlic in a mortar with a little salt until it forms a paste.
- In a bowl, crush and beat the feta until creamy.
- Add the yogurt, garlic, paprika, and herbs. Mix well.
- Season with lemon juice and olive oil. Season with salt and pepper. Mix well.
- Refrigerate for at least two hours before eating.
Notes
- Watch out for the saltiness, as the feta is already quite salty.
- The pepper should be very well drained to remove most of the excess moisture.
- Serve the ktipiti with toasts, blinis, or vegetable sticks (eg carrots, peppers, cucumbers).
