Ingredients
Flatbread:
- 200 grams about 2 cups rye flour (spelt, buckwheat or all-purpose flour will also work)
- 1 tsp baking powder
- 200 grams about 3/4 cup plain greek yogurt
Lamb:
- 1 lbs / 454 grams ground lamb
- 1 tbsp za'atar or other Middle Eastern seasoning
Salad:
- 1/2 cucumber thinly sliced
- 1/2 pint small ripe tomatoes halved or quartered
- 1/2 large bell pepper
- 1/4 red onion thinly sliced
- 1/4 cup chopped fresh cilantro and mint leaves either one is optional
- 1 lemon
- Drizzle of olive oil
- Salt and pepper to season
Sumac yogurt:
- 1/2 cup thick plain Greek yogurt
- 1 tbsp sumac
