This is the breakfast burrito that'll have you wanting more! Packed with sweet Filipino pork sausage, creamy fried egg, garlicky Adobo fried rice, & refreshing tomatoes! It's a perfectly balanced burrito that's absolutely drool-worthy!

  • 1 cup cold rice
  • 5 garlic cloves minced, optional
  • 4 longanisa sausage diced
  • 2 eggs
  • 2 large tortillas
  • ¼ cup white vinegar
  • ¼ teaspoon ground black pepper
  • 1 tomato diced

Adobo Sauce for Fried Rice*

  • 5 garlic cloves minced
  • ¼ medium onion chopped
  • 2 tablespoons low-sodium soy sauce
  • 1/2 tablespoon rice vinegar
  • 1 dried bay leaves
  • 1/8 teaspoon ground black peppercorn
  • 1/2 tablespoon sugar

Instructions

Make Adobo Sauce*

  1. (If you have leftover adobo, skip this step.) Heat a large pan, on medium-high heat. Add a little oil then add garlic and onions. Saute for a few seconds until they’re soft and fragrant.
  2. Pour in the remaining adobo sauce ingredients. Reduce the heat to medium-low and simmer uncovered for 5 - 10 minutes without stirring. Once the sauce has slightly thickened and there isn’t a sharp vinegar tasted, remove bay leaves.

Make Adobo Fried Rice

  1. Increase the heat to medium-high then add in the cold rice. Stir fry for a couple of minutes or until all of the sauce is absorbed into the rice.
  2. This step is optional but recommended if you love garlic! Push the rice off to the side of the pan, add a little more oil, then add minced garlic. Cook in the oil for a couple of seconds until they’re soft and fragrant. Combine with the rest of the rice then remove the rice and set aside.

Prepare Remaining Ingredients

  1. Add about a tablespoon of oil to the pan then add the longanisa sausage. Cook for 5 - 7 minutes, or until cooked through. Remove and set aside.
  2. Add a little more oil to the pan if needed then crack the eggs. Cook to your liking (over easy, medium, etc.) then set aside.
  3. In a small bowl, mix together vinegar & black pepper. Set aside.
  4. Heat tortillas until they’re soft and flexible. Lay them on a clean dry surface to assemble your breakfast burrito.

Assemble Your Burrito

  1. Begin layering your burrito starting with the adobo fried rice, then the loganisa, eggs, and diced tomatoes. Keep about 2 inches of space on from the edge of the tortilla.
  2. Roll the burrito by bringing the bottom end of the tortilla over the filling, then snuggly tuck it under the filling. Bring the sides of the tortilla to the center, then roll to the top.
  3. Serve with peppered vinegar on the side. Enjoy by drizzling a little of the peppered vinegar onto the burrito between bites!

Notes

  • Adobo Sauce: If you have leftover adobo, you can skip the first step of making the sauce and use the sauce from your leftovers - even easier!
  • Rice: Cold leftover rice is ideal because it absorbs liquid much easier than freshly cooked rice. Long grain rice creates flakey restaurant-style fried rice. Avoid sweet, sushi, or glutinous rice because they become stickier and clump.
