Low-Carb Crustless Pizza {Gluten-Free, High Protein + Super Simple}

Ingredients

  • 8 egg or 1 cup of liquid egg whites, divided, white
  • 2 tablespoons Parmesan Cheese reduced-fat, grated
  • 1/2 teaspoon Italian seasoning
  • Pinch salt
  • pizza sauce I used 2 tablespoons pizza sauce and 1/4 cup turkey pepperoni, and toppings of choice
  • 1/2 cup mozzarella cheese grated, reduced-fat

Instructions

  1. Preheat your broiler and spray a baking sheet with nonstick cooking spray. Set aside
  2. Spray a small nonstick skillet with nonstick cooking spray and heat over high heat.
  3. Once hot, reduce the heat to medium-low and slowly pour in 4 egg whites (or 1/2 cup of liquid egg whites). Cover with a tight fitting lid. Cook until the top of the egg whites are just set and slightly bubbly (about 2-3 minutes).
  4. Remove the lid, carefully flip the egg whites, and cook for an additional 2-3 minutes, or until the “crust” is cooked.
  5. Slide onto a plate and repeat with the remaining 4 egg whites (or 1/2 cup liquid egg whites).
  6. Transfer each “crust” to the prepared baking sheet and sprinkle each with 1 tablespoon of grated Parmesan cheese, 1/4 teaspoon of Italian seasoning, and a pinch of salt. Spread the mixture out to cover each crust.
  7. Adjust your oven rack to the top position and broil the "crusts" until golden brown and crunchy, about 7-10 minutes. They burn easily so watch them closely!
  8. Take the crusts out of the oven and top with pizza sauce, toppings, and cheese.
  9. Broil for an additional 2-3 minutes, until the cheese is melted and golden.
  10. Serve immediately and DEVOUR.
