Mbatata

Mbatata have the same appearance as regular cookies. However, those delicious sweet potato treats from Malawi are slightly softer.

Ingredients

  • 2 sweet potatoes
  • ¼ cup milk
  • 4 tablespoons butter , melted
  • cup flour , sifted
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon

Instructions

  1. Peel sweet potatoes, cut into pieces and cook in salted boiling water until soft, about 30 minutes.
  2. Drain, then mash with a fork.
  3. Preheat oven to 375F/180C.
  4. Combine ¾ cup (200g) of mashed sweet potatoes with the milk and melted butter, and beat well.
  5. Sift together the flour, baking powder, sugar, salt and cinnamon. Add to potato mixture and mix well.
  6. Pour the dough onto a floured surface. Knead, and roll out with a rolling pin to a thickness of ½ inch (1cm). Cut with a cookie cutter.
  7. Place cookies on a lightly greased baking sheet or lined with parchment paper. Bake for 15 minutes or until cookies are light brown.
  8. Remove from baking sheet and place on wire rack to cool.
  9. Sprinkle additional cinnamon and sugar on top of the warm cookies.

Notes

  • - The consistency of the dough is moist and sticky. Work on a well-floured surface. - You can also add raisins to the cookies. - You can also spoon and drop the dough rather than rolling out. Slightly press them before baking.
