- 1 lb boneless, skinless chicken breast cut into bite sized cubes
- 3 TBS cornstarch (divided 2 TBS and 1 TBS)
- 1 TBS extra virgin olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 shallot, diced finely
- 2 cloves garlic, minced
- ¾ cup reduced sodium chicken broth
- 1 can artichoke hearts, drained and chopped
- 1 tsp oregano
- 1 lemon, juiced (reserved) and zested
- 6 ounces baby spinach
- Lemon wedges, optional garnish
