This sweet potato, bacon, and egg meal is a super simple Paleo Breakfast Meal Prep that you can make in less than an hour.

Ingredients
- 5-6 trips Bacon sugar-free, nitrate-free, paleo-friendly bacon.
- 3-4 sweet potatoes peeled and diced into half inch cubes
- 1 large onion diced
- salt and pepper to taste
- 4 eggs or 8 eggs if you want 2 eggs per meal
Instructions
- In a frying pan, add in your bacon over medium heat and cook until the bacon is done. Flipping at least once. Around 4-7 minutes, depending on your bacon, pan, and how crispy you like it.
- Once done, remove the bacon and place it on some paper towels to absorb the extra oil.
- Do not drain the oil from the pan. Add in the diced sweet potatoes and onions. Season with salt and pepper and sauté over medium heat until cooked through. Approximately 15 to 20 minutes.
- While the sweet potatoes and onions are cooking, cook your hardboiled eggs with your method of choice. Instructions for stovetop eggs, Instant Pot eggs, and air fryer hardboiled eggs.
- Once done, cut up your bacon and assemble your bowls.
