This easy Pineapple Casserole is a traditional southern recipe that makes the perfect side dish to go with ham at any pot luck or Easter dinner.

Ingredients
- 1 cup granulated sugar
- 6 tablespoons flour
- 6 ounces sharp cheddar shredded
- 2 ounce cans pineapple chunks drained, and 6 tablespoons pineapple juice reserved
- 2 ounces Ritz cracker crumbs
- 4 tablespoons butter melted
Instructions
- Preheat the oven to 350 degrees F.
- Prepare a medium size (approximately 11x7 inch) casserole dish by greasing it with non-stick spray or butter
- In a large bowl combine sugar, flour, and cheese. Toss together until they are well combined.
- Drain the pineapple chunks making sure to reserve a small amount of liquid for the topping. Add the drained pineapple chunks to the cheese mixture and toss together until well combined.
- In a separate small bowl combine the cracker crumbs, melted butter, and reserved pineapple juice and stir together until well combined.
- Pour the pineapple mixture into the casserole dish and top with the cracker mixture.
- Bake for 25-30 minutes until golden brown on top.
