Pineapple Casserole is a popular southern dish. It is loaded with pineapple. cheese, and topped with crushed crackers. It is delicious and easy to make.

Ingredients
- 1/3 cup all purpose flour
- 1/2 cup granulated sugar
- 1 can pineapple tidbits drained
- 1 can crushed pineapple drained
- 2 cups sharp cheddar cheese shredded
- 1 sleeve ritz crackers approximately 30-40 crackers, crushed
- 1/4 cup butter melted
Instructions
- Preheat the oven to 350 degrees F and spray either a 9x9 baking dish or a 1 1/2 quart casserole pan with a non-stick cooking spray.
- In a large mixing bowl, whisk together the flour and sugar. Then stir in the drained pineapple and the shredded cheddar cheese.
- Pour this mixture into the baking dish or casserole pan.
- In a separate small mixing bowl, stir together the crushed crackers and melted butter.
- Sprinkle this mixture on top of the casserole.
- Bake for 35-40 minutes until the casserole is heated through and the top of the casserole is browned.
- Serve immediately while warm and enjoy!
Notes
- This casserole can easily be a dessert or a side dish.
- We do not recommend fresh pineapple for this recipe.
- Refrigerate the leftovers covered for up to 4-5 days. You can easily reheat the leftovers in the oven or the microwave to reheat and enjoy your leftovers.
