  • 1/2 vanilla pod scraped
  • 125 gms all-purpose flour 1 cup
  • 65 gms sugar
  • 65 gms butter cubed, 4 ½ tbsp; unsalted
  • 4 tbsp coconut shredded
  • 2 tbsp Butterscotch sauce +more to serve
  • double cream optional, or vanilla ice cream; to serve
