Protein Mug Cake

This high protein mug cake is chocolaty, moist, and so flavorful! This easy dessert is made with only a few pantry staple ingredients. Great for an afternoon treat, healthier dessert, or even breakfast!

Ingredients
- 2 tsp cocoa powder
- 2 tbsp oat flour
- 1 tbsp coconut sugar
- 3 tbsp protein powder see note
- ¼ tsp baking powder
- ⅓ cup unsweetened coconut milk or other dairy-free milk
- 2 tbsp mini dark chocolate chips

Instructions
- To start, add all of the ingredients to a large mug or ramekin. Save a few mini chocolate chips for garnish.
- Mix the ingredients together. The batter will be similar to pudding.
- Next, microwave on high for 60 seconds. If more time is needed, microwave in quick 10-second increments until cooked through.
- Use oven mitts to remove the mug from the microwave. Sprinkle more chocolate chips on top!
- Finally, serve this protein mug cake!

- It can be very tough to find real food protein powder. We love Prime Protein Unflavored because it contains only one ingredient!
- If you need to replace the oat flour, use 3 tablespoons of almond flour instead.
- For a version with less sugar, omit the chocolate chips. They contain a little added sugar.
- Your microwave may be stronger or weaker. Adjust the cooking time as needed.
- Be careful handling the mug. It will be very hot!
- Best served warm and fresh.
