Red Cabbage Slaw is perfect for those summer BBQs or potlucks! Everyone will enjoy the crisp, tangy taste of this salad!

Ingredients
- 4 cups shredded red cabbage about ½ head
- 2 carrots shredded or julienned
- 1 small apple julienned
- 2 tablespoons chopped fresh parsley
- ½ cup Chopped Pecans or walnuts, optional
Dressing
- 2 tablespoons orange juice
- 2 tablespoons vegetable oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon granulated sugar
- ½ teaspoon Dijon mustard
- ¼ teaspoon salt
- black pepper to taste

Instructions
- Combine all dressing ingredients in a bowl and whisk. Set aside.
- Shred the cabbage as finely as possible.
- Combine all ingredients except the pecans in a bowl. Toss with dressing.
- Refrigerate at least 1 hour before serving. Top with pecans and serve.
Notes
- Store in an airtight container in the fridge for up to 5 days.
- Stir, drain and add salt and pepper to refresh.
