Rich Chocolate Cake with Milk Chocolate Ganache
Description
The chocolate cake batter combines all-purpose flour, cocoa powder, baking powder, baking soda, salt, and sugar with wet ingredients including milk, canola oil, Greek yogurt, white vinegar, freshly brewed espresso, and hot water. After mixing dry and wet ingredients, the batter is poured into cupcake liners in a tray and baked at 350°F for 12 to 15 minutes until set.
The milk chocolate ganache is made by heating coconut cream to boiling, then pouring it over milk chocolate. Stirring melts the chocolate and forms a smooth, glossy ganache that is left to cool overnight at room temperature to thicken properly for spreading over the cooled chocolate loaf cake.
The combination of cocoa and espresso in the cake enhances the chocolate depth, while the yogurt adds moistness and softness. The coconut cream in the ganache adds richness and a subtle tropical note, balancing the milk chocolate sweetness.
