Roasted Balsamic Strawberries
Description
This simple recipe starts by mixing hulled and quartered strawberries with balsamic vinegar, olive oil, and pure maple syrup. Spread evenly on a lined, lightly oiled baking tray, the strawberries roast in a moderate oven temperature between 30 to 45 minutes. Shorter roasting maintains juiciness and softness, while longer roasting results in more dehydration and thicker juice with intensified flavor.
The roasting process gently caramelizes the natural sugars and melds the vinegar’s tang with the rich sweetness of maple syrup, producing a well-rounded flavor balance. Once cooled, the berries can be spooned out carefully to preserve their texture and juice.
Roasted Balsamic Strawberries serve excellently as a topping for desserts like ice cream or yogurt, or mixed into salads for sweetness and acidity. Adjust roasting time to your preferred texture, and store any leftovers refrigerated for a few days.
Ingredients
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tbsp pure maple syrup
- 400 g (14oz) strawberry hulled and quartered
Instructions
- Preheat the oven to fan assisted 160C / 180C / 350F / gas 4 and lightly oil a lined baking tray.
- Mix all the ingredients for the balsamic strawberries together and spread them out on the baking tray.
- Roast strawberries for approximately 30 mins (for still soft and juice berries) to 45 mins (for more dehydrated, darker and intense flavoured strawberries) and the juice is nice and thick.
- After they have cooled down carefully remove the strawberries into a bowl and set aside.
