Ingredients
- 1 butternut squash
- 2 tablespoons olive oil
- 2 cloves garlic , minced
- 1 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
Instructions
- Preheat oven to 400 degrees.
- Peel and de-seed the butternut squash, then cut into 1" cubes.
- Toss the squash with the oil, garlic, salt, and pepper.
- Place onto baking sheet and bake for 28-30 minutes.
