Oven roasted carrots are a delicious, healthy side dish, perfect for serving with a holiday meal. This easy side dish recipe makes tender baby carrots with a sweet honey glaze. They are simply irresistible!

Ingredients
- 1 pound baby carrots
- 2 tablespoons olive oil
- 2 tablespoons honey
- cooking spray
Optional Seasonings:
- 1 teaspoon Cajun Seasoning (or more if desired)
- 1 teaspoon Italian seasoning
- salt and pepper (to taste)
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- In a large bowl add carrots, olive oil, honey, and whatever seasonings you'd like. Toss ingredients together, being sure carrots are well coated.
- Place a piece of aluminum foil down on a baking sheet.
- Spray the foil lightly with cooking spray and spread on carrot mixture.
- Bake for 25-30 minutes, or until carrots are fork tender.
- Serve immediately.
