Roasted Carrots

Oven roasted carrots are a delicious, healthy side dish, perfect for serving with a holiday meal. This easy side dish recipe makes tender baby carrots with a sweet honey glaze. They are simply irresistible!

Ingredients

Servings
  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • cooking spray

Optional Seasonings:

  • 1 teaspoon Cajun Seasoning (or more if desired)
  • 1 teaspoon Italian seasoning
  • salt and pepper (to taste)

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a large bowl add carrots, olive oil, honey, and whatever seasonings you'd like. Toss ingredients together, being sure carrots are well coated.
  3. Place a piece of aluminum foil down on a baking sheet.
  4. Spray the foil lightly with cooking spray and spread on carrot mixture.
  5. Bake for 25-30 minutes, or until carrots are fork tender.
  6. Serve immediately.
