Ingredients
- 1 lb (500g) baby carrots
- 2 tablespoons unsalted butter melted
- 2 cloves garlic minced
- 1 tablespoon lemon juice
- 1 pinch salt
- 1 tablespoon chopped parsley
- 1/3 cup shredded Parmesan cheese
Instructions
- Preheat the oven to 400°F (207°C).
- In a mixing bowl, combine the carrots, butter, garlic, lemon juice, salt, and parsley. Stir and toss well.
- Transfer the carrots to an oven-safe skillet and top them with the Parmesan cheese. Roast for 30 minutes, or until tender. Dish out and serve immediately.
