Roasted Carrots are a fabulously simple yet extremely flavorful way to a another healthy side to any meal.

Ingredients
- 1 pound of baby carrots
- 3 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon of balsamic vinegar
- 1 teaspoon of dried thyme
- salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees.
- Place carrots on a baking sheet and toss with olive oil, garlic, balsamic vinegar and thyme
- Bake for 30 minutes or until the carrots are tender
- Serve hot, warm or at room temperature.
- These will keep for four to five days in the refrigerator.
