Savoury eggs, cheddar and bacon breakfast waffles

Ingredients

Servings
  • 225 g all-purpose flour all purpose flour
  • 2 tbsp cornflour cornstarch
  • 1 tbsp parsley fresh flat leaf, finely chopped
  • 1 tsp garlic salt or table salt
  • 1 tsp baking powder
  • 2 egg separated, large
  • 370 ml milk whole + 2 tsp lemon juice
  • 60 g butter melted and cooled, salted
  • 100 g cheddar cheese mature, finely grated
  • 6 smoked back bacon cut in half lengthwise to create 12 strips, large slices
  • 3 to tomato optional, sliced thinly
  • cooking spray optional, to grease waffle maker
  • salt to season
  • black pepper to season
  • maple syrup optional, to serve
  • baked beans optional, to serve

Instructions

  1. Whisk the egg whites with a pinch of salt until you have stiff peaks.
  2. Place the flour, cornflour, parsley, garlic salt and baking powder in a bowl. Mix together using a balloon whisk.
  3. Mix the milk, melted butter, egg yolks and grated cheese together in a measuring jug and gradually beat into the dry ingredients until the batter is smooth.
  4. Fold in the whisked egg whites.
  5. Preheat your waffle maker and spray with cooking oil (if indicated by instruction manual).
  6. Lay 2 strips of bacon directly on the waffle maker (and a couple of slices of tomato if using) then add a ladleful of the batter on top. Don't add too much as it will spread out when you close the lid of the waffle maker.
  7. Cook for 3-4 minutes or until the waffle is golden and crisp. Repeat until all the batter is used up.
  8. Serve topped with eggs (optional) or with a drizzle of maple syrup.

Notes

  • Keep any leftovers in the fridge and reheat in your toaster.
