Description
Shichimi Togarashi (Japanese 7 Spice Blend) blends several toasted spices and seeds that provide a balance of heat, citrus brightness, nuttiness, and a subtle herbal seaweed note from the roasted nori. The toasting of sesame seeds, Sichuan peppercorns, and poppy seeds helps release their oils and deepen flavor. Grinding the mixture coarsely ensures it works well as a finishing spice with a textured bite rather than a powdery dust. The orange peel adds mild acidity while the combination of red chili flakes and Sichuan peppercorns creates warmth and a tingling sensation.
To prepare, the spices are toasted individually and cooled before seasoning all components are pulse-ground together. This method preserves the integrity and aroma of each ingredient. The balance of salty, spicy, nutty, and citrusy notes makes Shichimi Togarashi ideal for sprinkling on rice bowls, grilled fish or meats, and noodle dishes.
The recipe allows adjustment of the spiciness by using less red chili flakes if preferred. Storing the mix in an airtight container maintains its potency for several weeks, with the best flavor enjoyed fresh.
Ingredients
- 2 tablespoons red chili flakes (note: shichimi togarashi is HOT, use less red chili according to your heat preference)
- 1 tablespoon orange peel use less, about 1 teaspoon, if making nanami togarashi, dried
- 2 teaspoons white sesame seeds
- 2 teaspoons black sesame seeds
- 1 teaspoon Sichuan peppercorns or sanshō
- 1 teaspoon ground ginger
- 1/2 teaspoon poppy seeds
- 1/2 heet nori crumbled, roasted
Instructions
- In a dry skillet, lightly toast the white and black sesame seeds, sichuan peppercorns and poppy seeds until fragrant, being careful not to burn them. Transfer to a bowl and let them cool completely.
- Place all of the ingredients along with the nori in a spice/coffee grinder and pulse until coarsely ground (be sure it's coarse and not a fine powder).Store in an airtight jar. For optimal flavor use within a few weeks.
