Ingredients
- 1 cup corn kernels fresh or canned
- 1/4 cup red onion finely chopped
- 1/4 cup red bell pepper diced
- 1 small jalapeño seeded and finely diced
- 2 tablespoons fresh cilantro chopped
- 1 tablespoon lime juice
- 1 tablespoon olive oil extra virgin
- 1 Chipotle Pepper in Adobo Sauce finely chopped
- 1/4 teaspoon ground cumin
- salt and pepper to taste
Instructions
- In a small mixing bowl, whisk together the lime juice, olive oil, chipotle pepper, cumin, salt, and pepper.
- In a seperate mixing bowl, combine the sweet corn, red onion, red bell pepper, jalapeño, and cilantro.
- Pour the dressing over the corn mixture and toss gently until well combined.
- Adjust seasoning according to taste preference, adding more salt, pepper, or lime juice if desired.
- Cover the salsa and refrigerate for a minimum of 30 minutes to allow the flavors to infuse together.
- Serve chilled as a topping for tacos, grilled meats, salads, or as a dip with tortilla or pita chips.
Notes
- I like to use fresh corn, but you can also use thawed frozen corn or drained canned corn to make this simple recipe.
