Skillet Pork Chops with Maple Dijon Vegetables is marinated Smithfield Steakhouse Mushroom Flavored Pork cut into pieces and sautéed with tender vegetables covered with a golden maple glaze. All under 30 minutes!

Ingredients
- 1 (1.34-pounds) package Smithfield pork loin cut into one inch slices
- 3 tablespoon olive oil divided
- salt and pepper
- ½ pound Brussels sprouts quartered
- 2 sweet potatoes cut into 1 inch cubes
- ½ pound baby red potatoes quartered
- ¼ cup Dijon mustard
- ⅓ cup maple syrup
- 1 tbsp apple cider vinegar

Instructions
- In a large skillet, add 1 tablespoon olive oil. Add the sliced pork and cook until no longer pink, about 4-5 minutes on each side. Remove and set aside on a plate.
- Add the remaining 2 tablespoons of olive oil. Add Brussels sprouts, sweet potatoes, and baby potatoes. Sauté until almost fork tender, about 8 minutes.
- Whisk together the Dijon mustard, maple syrup, and apple cider vinegar in a small bowl. Pour on top of the vegetables and toss to coat.
- Add the pork back to the skillet and heat throughout. Serve warm and enjoy!
