Ingredients
- 1 (15-ounce) can rinsed & drained black beans
- 1 (15-ounce) can rinsed & drained chickpeas
- 1 (15-ounce) can corn
- 1 pint halved cherry tomatoes
- 2 ½ cups Diced avocado about 2 medium avocados
- 1 (4.25-ounce) can diced olives
- 2 tablespoons lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon cumin
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- ¼ cup chopped fresh cilantro
- ¼ cup crumbled Feta cheese
Instructions
- In a large bowl combine 1 (15-ounce) can rinsed & drained black beans, 1 (15-ounce) can rinsed & drained chickpeas, 1 (15-ounce) can corn, 1 pint halved cherry tomatoes, 2 ½ cups diced avocado, and 1 (4.25-ounce) can diced olives.
- In a small bowl whisk together 2 tablespoons lime juice, 2 tablespoons extra virgin olive oil, 1 teaspoon cumin, ¼ teaspoon chili powder, ¼ teaspoon salt, and ¼ cup chopped fresh cilantro.
- Pour the dressing over the salad and toss until combined. Garnish with ¼ cup crumbled feta cheese and serve immediately.
