Strawberry Salad with Poppyseed Dressing

This beautiful summer Strawberry Poppyseed Salad is packed with fresh juicy strawberries, pecans, feta and drizzled with a healthy poppyseed dressing. Easy, colorful, and healthy this salad is always a crowd pleaser!

Ingredients

Poppyseed Dressing

  • ½ cup plain greek yogurt
  • 3 tablespoons maple syrup
  • 1 teaspoon apple cider vinegar
  • ¼ cup extra virgin olive oil
  • teaspoon salt
  • 1 teaspoon poppyseeds

Strawberry Salad

  • 2 cups ripe strawberries
  • 8 cups mixed spring greens
  • ½ red onion
  • ½ cup pecans chopped
  • ½ cup feta crumbled

Instructions

  1. Prepare a medium size bowl with cold water, thinly slice the red onion and place in the bowl to soak while preparing the salad. (This helps to mellow the flavoring)
  2. Prepare the strawberries by washing and slicing. Set aside
  3. Make the dressing by combining all of the ingredients in a small jar, close the lid and shake to combine. 
  4. To prepare the salad, layer the greens, top with the sliced strawberries, red onions, chopped pecans, feta crumbles. 
  5. Drizzle with the salad dressing and serve immediately.

Notes

  • Depending on thickness of yogurt, you may need to adjust by adding milk of choice to get desired consistency.
