This beautiful summer Strawberry Poppyseed Salad is packed with fresh juicy strawberries, pecans, feta and drizzled with a healthy poppyseed dressing. Easy, colorful, and healthy this salad is always a crowd pleaser!

Ingredients
Poppyseed Dressing
- ½ cup plain greek yogurt
- 3 tablespoons maple syrup
- 1 teaspoon apple cider vinegar
- ¼ cup extra virgin olive oil
- ⅛ teaspoon salt
- 1 teaspoon poppyseeds
Strawberry Salad
- 2 cups ripe strawberries
- 8 cups mixed spring greens
- ½ red onion
- ½ cup pecans chopped
- ½ cup feta crumbled
Instructions
- Prepare a medium size bowl with cold water, thinly slice the red onion and place in the bowl to soak while preparing the salad. (This helps to mellow the flavoring)
- Prepare the strawberries by washing and slicing. Set aside
- Make the dressing by combining all of the ingredients in a small jar, close the lid and shake to combine.
- To prepare the salad, layer the greens, top with the sliced strawberries, red onions, chopped pecans, feta crumbles.
- Drizzle with the salad dressing and serve immediately.
Notes
- Depending on thickness of yogurt, you may need to adjust by adding milk of choice to get desired consistency.
