Sugar Free Chocolate Mousse Recipe
Description
The recipe begins by melting unsweetened chocolate and mixing in a sugar-free sweetener to taste. Once lukewarm, the yolks of room-temperature eggs are stirred into the chocolate, and whipped egg whites folded in carefully to maintain an airy texture. This method produces a mousse that is smooth and light while retaining deep chocolate flavor without sweetness from sugar.
After spooning the mixture into serving glasses, chilling in the refrigerator allows it to firm up to a mousse consistency. Optional whipped cream on top provides a creamy contrast to the slightly bitter chocolate base.
This mousse serves six and can be enjoyed as a low-carb dessert. It fits well in menus requiring sugar-free options while still delivering a chocolate treat.
Adjust sweetness by choosing different sugar substitutes like allulose or adding liquid stevia. If unsweetened chocolate is unavailable, sugar-free or high cacao dark chocolate can be substituted, with sweetness adjusted accordingly.
Ingredients
- 6 oz unsweetened chocolate 170g
- 6 egg room temperature, or 5 large, medium
- 5 tablespoons Sukrin Fibre syrup or allulose
- Whipped Cream optional; for topping
Instructions
- Melt the chocolate in the microwave or in a non-stick pot over low heat. Stir in the sweetener of your choice, then let cool to lukewarm.
- Separate the eggs and whisk the egg whites until stiff peaks form.
- Stir the egg yolks into the chocolate mixture, then fold in the whipped egg whites.
- Spoon the mixture into 6 serving glasses and chill in the fridge until set.
- Serve with a dollop of whipped cream.
Notes
- Each serving contains about 1 gram of net carbs, making it suitable for low-carb diets.
- For extra sweetness, a few drops of liquid stevia can be added to the chocolate mixture before chilling.
- If unsweetened chocolate is unavailable, substitute with sugar-free chocolate or dark chocolate with at least 85% cocoa solids and adjust sweetener as needed.
