Sugar Free Chocolate Pudding achieves a smooth, creamy texture using skim milk, cocoa powder, and cornstarch thickener. Sweetened with a sugar substitute, the pudding incorporates melted sugar-free chocolate chips and butter for richness without added sugar. This chilled dessert satisfies chocolate cravings in a guilt-free way.

Description

This pudding is made by heating skim milk mixed with unsweetened cocoa powder, cornstarch, and a sugar substitute until hot but not boiling. Separately, egg yolks are beaten then tempered with the hot mixture to avoid curdling. Returning the combined custard to the heat thickens it into a creamy pudding.

Once removed from heat, butter and sugar-free chocolate chips are stirred in to melt smoothly, rounding out the chocolate flavor and texture. After chilling for several hours or overnight, the pudding firms to a rich yet light consistency.

This recipe allows for the use of different sugar substitutes; for example, Swerve is used here, but if substituting Splenda, adjust quantity accordingly. It can be served on its own or with toppings such as whipped cream or berries for added variation.

  • 2 cups milk skim
  • 2 tablespoons cocoa powder unsweetened
  • 2 1/2 tablespoons cornstarch
  • 2 large egg yolk
  • 1/2 cup Swerve or sugar substitute
  • 3 oz chocolate chips sugar free or chopped chocolate
  • 1 tablespoon butter

Instructions

  1. In a saucepan, place the milk, cornstarch, sugar substitute, and cocoa powder. Whisk and cook on medium heat until the mixture becomes hot. Do not let it boil
  2. Meanwhile, whisk the egg yolks in a large bowl
  3. Slowly add the hot milk to the egg mixture while whisking constantly to avoid the egg from cooking
  4. Return the custard to the saucepan and cook on medium-low until pudding starts to thicken and becomes very creamy. About 4-5 minutes
  5. Remove from heat and add the butter and chocolate chips. Whisk until the chips have completely melted
  6. Pour pudding into cups or ramekins
  7. Refrigerate a minimum of 4 hours or overnight
  8. Enjoy!

Notes

  • If substituting Splenda for Swerve, use 1/2 cup instead of 1/2 cup Swerve.
  • Cook the pudding without boiling to prevent lumps and curdling.
  • Chill pudding for at least 4 hours or overnight for best texture.
