Suji Ka Halwa

Suji Ka Halwa is a traditional Indian sweet made by roasting semolina in butter and cooking it with sugar, water, and fragrant cardamom, then garnishing with raisins and nuts. This warm dessert has a smooth, soft consistency with rich buttery flavor and aromatic spices.

Description

Suji Ka Halwa begins by melting butter in a pan on low heat, then adding split green cardamom pods to release their fragrance. Semolina (suji) is then added and cooked for several minutes while stirring constantly to avoid burning, allowing the semolina to toast and develop a nutty aroma. Sugar is incorporated, blending in with the hot mixture. Water is added to create the halwa's soft texture and cooked until thickened to the desired consistency.

The finishing garnishes of raisins, pistachios, and almonds add textural contrast and sweetness. The cardamom infuses a subtle floral-spicy note that distinguishes this dish. Served warm, it is often enjoyed during festivals or as a comforting dessert.

The dish's balance of buttery richness, sweetened semolina, and fragrant spice makes it satisfying and richly textured. It is commonly prepared with attention to steady cooking and stirring to ensure a smooth, lump-free result.
