Ube Brochi® (Purple Yam Brownie Mochi)

Ube Brochi® is a baked treat combining purple yam with mochi flour to create a dessert that blends the chewy texture of mochi with the sweet, earthy flavor of ube. Its brownie-like appearance and texture come from the mix of grated ube, egg, coconut milk, sugar, and mochiko flour, baked until firm yet tender.

Description

This recipe for Ube Brochi® uses frozen grated ube mixed with egg, sugar, coconut milk, vanilla extract, and a pinch of salt, then combined with mochiko flour (glutinous rice flour). Baking the batter produces a dense, slightly chewy, and moist texture reminiscent of both brownies and mochi desserts. Covering the pan with foil partway through baking prevents over-browning while allowing it to cook evenly.

The final product has a rich purple color and a subtly sweet, earthy taste from the ube. It can be sliced into multiple servings, making it convenient for sharing or for multiple treats across several occasions.

Slicing after cooling helps maintain its shape, and the recipe notes that Brochi® is a registered trademark, suggesting a specific style of preparation and texture associated with this dessert.

Ingredients

Servings
  • 180 g ube frozen, grated
  • 1 egg large
  • 50 g granulated cane sugar
  • 125 ml coconut milk sub with whole milk or any non-dairy alternative
  • 5 ml vanilla extract
  • tiny pinch of sea salt
  • 130 g Mochiko flour or glutinous rice flour

Instructions

  1. Preheat the oven to 350°F/177°C.
  2. Line an 8" by 8" baking pan with parchment paper.
  3. In a large bowl, whisk together the grated ube, egg, sugar, milk, vanilla extract, and sea salt until smooth.
  4. Add in the mochiko (or glutinous rice flour) and whisk until incorporated.
  5. Pour the batter into the prepared baking pan.
  6. Give it a few taps to release any trapped bubbles.
  7. Bake at 350°F/177°C for about 40 minutes, or until a toothpick inserted comes out clean. (To prevent excessive browning, cover with aluminum foil about 10 minutes into the bake).
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to completely cool.
  9. Slice into 16 pieces and serve.

Notes

  • Brochi® is a registered trademark, highlighting the distinct name for this purple yam mochi brownie.
