Vegan Coconut Curry with Apples
Description
The Vegan Coconut Curry with Apples features sautéed onions and garlic softened in a pot before adding diced apples and spices like curry powder, ginger, and turmeric. These aromatics give a warm and mild spice profile combined with the sweetness of Fuji apple. Coconut milk and optional additions like shredded coconut and vegan sausage enrich and thicken the curry. It’s simmered gently to develop a creamy texture where the soft apples contribute a tender bite without becoming mushy.
The combination of soy sauce, sugar, and spices balances the curry’s flavor with umami and subtle sweetness. This curry suits those looking for a plant-based option blending fruity and spiced notes.
For serving, it complements steamed rice or flatbreads, providing a comforting vegan main course that can be customized with optional sausage or coconut.
Adjust spice levels by choosing a curry powder that suits your taste, slice apples evenly for uniform cooking, and simmer with the lid off to thicken the sauce if desired.
Ingredients
- ½ yellow onion chopped, large
- 1 to 2 garlic minced, number missing
- 1 medium Fuji apple diced
- 1 tablespoon curry powder
- ginger pinch
- Turmeric dash
- 1 light coconut milk 13.5-ounce can
- 1 tablespoon granulated sugar or other sweetener
- 1 tablespoon coconut optional, shredded
- 1 to 2 tablespoons soy sauce
- vegan sausage optional, of choice
- salt to taste
- black pepper to taste
- parsley optional, for garnish
Instructions
- In a medium-large pot over medium heat, sauté the onion and garlic. Add water if the ingredients start to stick.
- Once the onions have become translucent, add the diced apple and continue heating until softened. Add in the spices and mix well.
- Add in the coconut milk, soy sauce, sugar, shredded coconut, and vegan sausage if using. Stir until a boil begins to form and reduce the heat to low. Cover and simmer for 15-20 minutes.
- Add salt and pepper to taste, stir and serve the curry.
Notes
- Select a curry powder with a spiciness level that matches your preference.
- Peeling the apples is unnecessary; uniform slicing ensures even cooking.
- Avoid overcooking apples—they should be softened but retain shape.
- To thicken the sauce, simmer uncovered briefly before finishing.
