Vegan Oatmeal Cookies
Description
This Vegan Oatmeal Cookies recipe uses melted coconut oil as the fat component, mixed with brown sugar and vanilla for sweetness and aroma. Boiling water is added to activate the baking soda before folding in oats, gluten-free baking flour, and salt. Dark chocolate chips are incorporated to complement the oat base with bursts of chocolate flavor.
The dough is portioned into balls and baked until just golden. The resulting texture offers a balance of crispness and chewiness, characteristic of oatmeal cookies, while being free from animal products. These cookies can serve as a snack or dessert option for those following a vegan or gluten-free diet.
