Wafu Dressing (Japanese Salad Dressing)

Wafu Dressing is a Japanese-style salad dressing that combines grated onion, neutral oil, soy sauce, rice vinegar, sugar, ground black pepper, and toasted white sesame seeds. The dressing balances tangy, savory, and slightly sweet flavors with a hint of sesame nuttiness. It’s commonly drizzled over salads featuring crisp vegetables like iceberg lettuce, cucumber, and radish, as well as toppings such as boiled egg and wakame seaweed. The dressing also stores well refrigerated for up to 10 days.

Description

This Wafu Dressing recipe mixes grated onion with neutral oil, soy sauce, rice vinegar, and sugar, seasoned with freshly ground black pepper and toasted white sesame seeds. The combination produces a balanced dressing that complements fresh vegetables with its sweet, sour, and umami flavors.

The recipe suggests using a ceramic grater for the onion to achieve a finely grated texture that blends smoothly into the dressing. Drizzled over a mix of hand-torn iceberg lettuce, tomatoes, boiled egg, wakame, cucumber, and red radish, the dressing enhances the freshness of each ingredient while adding a light, savory finish.

It can be prepared ahead and stored in an airtight container in the refrigerator for 7 to 10 days, making it convenient for regular use. The toasted sesame seeds add a subtle crunch and nuttiness that characterizes this dressing as distinctively Japanese.
