Air Fryer Corned Beef Hash

Make the BEST Corned Beef Hash in your Air Fryer! Delicious for breakfast, brunch or lunch and super-easy to make. A great way to use homemade corned beef leftovers but just as yummy made using canned corned beef.

Ingredients

  • 2 onions , finely diced
  • 4 medium potatoes , peeled and cubed
  • 2 tbsp vegetable oil or use cooking spray
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 tsp mixed herbs
  • 7 oz (200g) corned beef low sodium canned corned beef or leftover cooked corned beef, cubed
  • ½ tbsp worcester sauce , or to taste
  • 2-4 eggs (optional)
  • 1 tbsp fresh parsley , chopped

Instructions

  1. Preheat air fryer for 5 minutes at 200°C (400°F). Place the onions and potatoes in the cake pan, or other air fryer container, and drizzle with the oil. Season with salt and pepper and sprinkle with the mixed herbs. Stir to coat in the oil and seasoning.
  2. Cook for 20 minutes at 180°C (350°F), stirring occasionally so that the potatoes brown. At this point they should be cooked but still a bit firm.
  3. Add the cubed corned beef and drizzle with the Worcester sauce. Cook for a further 5-10 minutes (depending on how crispy you like your hash) stirring halfway through.
  4. Make small wells in the hash and crack the eggs in them. Cook for a further 3-5 minutes or until the eggs are cooked to your liking.
  5. Have a taste and add more salt and pepper, if needed. Sprinkle with the parsley and serve!

Notes

  • If you have leftovers then stick them in the air fryer for about 5 minutes at 180°C (350°F) to reheat. 
  • I used a low sodium canned corned beef. Since corned beef can be very salty be stingy when seasoning the hash.
  • You can add more vegetables to your hash if you like. Diced peppers, tomatoes or mushrooms all work well.
  • Replace the corned beef with leftover cooked sausage, black pudding or chorizo.
  • If you have leftovers then stick them in the air fryer for about 5 minutes at 180°C (350°F) to reheat.
