  • 1 box corn muffin mix 8.5 ounces
  • 1 egg
  • cup milk
  • 2 tablespoons butter optional

Instructions

  1. Combine the corn muffin mix in a medium bowl with the egg and milk. Stir until mostly combined.
  2. Let the cornbread batter rest for 3 minutes. While it rests, preheat the air fryer at 325 degrees F.
  3. Fill six silicone muffin cups with the batter, filling each ⅔ full. Put the muffin cups in the air fryer basket.
  4. Cook at 325 F for 7-10 minutes, until the muffins are golden brown, and a toothpick inserted in the center comes out clean.
  5. Divide the butter into 6 parts and spread on top of each warm muffin so it melts.

Notes

  • Don't overmix the batter: When combining the ingredients, mix until they're just incorporated. 
  • Just like with a traditional oven, preheating your air fryer is crucial for even cooking. Give it a few minutes to heat up while the cornbread batter rests.
  • You can add shredded cheese, diced jalapeños, or crumbled bacon. Just fold them into the batter before cooking. Limit mixins to ½ cup.
  • Test the muffins for doneness by inserting a toothpick into the center of a muffin. They're ready to go if it comes out clean or with just a few moist crumbs!
