Air Fryer Pork Tenderloin Fajitas

Air fryer fajitas is a quick and easy meal the whole family will love!

Ingredients
- 1 ½ pound (680g) pork tenderloin
- cooking spray
- 3 bell peppers sliced in long strips
- 2 onions sliced
- 1 tablespoon + 1 teaspoon fajita seasoning

Instructions
- Preheat the Air Fryer to 400F / 204C.
- Using paper towels, pat pork tenderloin dry and then spray lightly with cooking spray.
- Rub pork with fajita seasoning mixture, leaving 1 teaspoon for the veggies.
- Spray rack and tray of air fryer with cooking spray.
- Cook pork tenderloin for 8-10 minutes. Flip over and cook for another 8-10 minutes. Check for internal doneness.
- Remove and place on a plate, cover with foil and allow to sit for 10 minutes.
- While pork is resting, spray veggies with cooking spray and coat with the remaining seasoning mix.
- Add veggies to the air fryer basket and cook for 5-8 minutes, depending on size of veggies.
- Slice the pork tenderloin, toss with veggies and serve.

Notes
- Cook time does not include time for the Air Fryer to preheat.
- Make sure to remove the “silver skin” from the tenderloin before prepping it with spray and seasonings. To do this, just use a sharp knife to peel it away from the meat.
- Allow the pork tenderloin to rest before cutting it so it retains the juices, and becomes even more flavorful.
- Short on time or spices? Use a mix of paprika and cumin instead of the fajita seasoning.
- Feel free to double or triple the recipe to serve a crowd.
