  • 1 cup cottage cheese
  • 2 ripe bananas
  • 2 large eggs
  • ¼ cup honey
  • 1 ½ teaspoons vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 cups old-fashioned oats

Instructions

Prep:

  1. Preheat the oven to 400F and position the top oven rack in the middle of the oven. Grease a 12-muffin pan or use foil liners -do not use paper liners, they'll stick.
  2. Add the following ingredients to a blender in the order listed: cottage cheese, bananas, eggs, honey, vanilla, baking powder, cinnamon, and oats. Blend for 45 seconds on high speed, until the batter is smooth.

Bake:

  1. Pour the batter into the muffin pan, filling each cup ¾ of the way to the top.
  2. Bake for 20 minutes, until the tops are brown and a toothpick inserted in the middle comes out clean.
  3. Remove from the oven and let them cool in the pan for 10 minutes before removing them.
