Ingredients
- 1 cup cottage cheese
- 2 ripe bananas
- 2 large eggs
- ¼ cup honey
- 1 ½ teaspoons vanilla
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 cups old-fashioned oats

Instructions
Prep:
- Preheat the oven to 400F and position the top oven rack in the middle of the oven. Grease a 12-muffin pan or use foil liners -do not use paper liners, they'll stick.
- Add the following ingredients to a blender in the order listed: cottage cheese, bananas, eggs, honey, vanilla, baking powder, cinnamon, and oats. Blend for 45 seconds on high speed, until the batter is smooth.
Bake:
- Pour the batter into the muffin pan, filling each cup ¾ of the way to the top.
- Bake for 20 minutes, until the tops are brown and a toothpick inserted in the middle comes out clean.
- Remove from the oven and let them cool in the pan for 10 minutes before removing them.
