My corned beef and cabbage soup is a hearty, comforting dish filled with meat and aromatic vegetables that doesn’t take much prep or fuss.

Ingredients
- 2 tbsp olive oil
- 1 yellow onion chopped (about 1 1/2 cups)
- 2 carrots chopped (about 1 1/2 cups)
- 3 stalks celery chopped (about 1 1/2 cups)
- 4 cloves garlic minced (about 2 tbsp)
- 1 tbsp whole-grain mustard
- 1 tsp caraway seeds
- 1/2 tsp dried thyme
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 8 cups beef broth
- 4 cups green cabbage chopped 1-inch pieces (½ of a small head)
- 2 cups red or gold potatoes quartered (about ½ pound)
- 4 cups cooked corned beef cubed (about 1 ½ lbs)
- 2 tbsp parsley finely chopped

Instructions
- Heat olive oil in a Dutch oven or soup pot over medium heat. Add the onion, carrots and celery and sauté for 5 minutes (stirring frequently).
- Add garlic, mustard, caraway seeds, thyme, salt, black pepper and cook another 5 minutes.
- Add the beef broth, cabbage and potatoes. Stir and bring to a boil. Reduce heat to simmer, cover and cook for 20 minutes. Add the corned beef, stir and cover. Cook another 10 minutes, or until corned beef is warmed through and cabbage, potatoes and carrots are tender. Season to taste.
- Serve garnished with parsley and potato rolls (option).
