This Easy Granola Butter Recipe tastes like an oatmeal cookie in spreadable form. A simple recipe made with roasted nuts, old-fashioned rolled oats and maple syrup; use it anywhere you use nut butter.

  • 2 cups rolled oats be sure to use gluten-free, if needed
  • 1 cup walnuts or your favorite nuts or seeds
  • 1 cup unsweetened coconut flakes
  • 3 tablespoons 100% pure maple syrup or substitute with honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • 2 tablespoons coconut oil melted (optional for thinning the texture if desired)

Instructions

  1. Preheat the oven to 300° F (150° C).
  2. In a large bowl, stir together the oats, walnuts, coconut flakes, vanilla extract, and maple syrup, making sure everything is evenly distributed.
  3. Spread the mixture on a sheet pan in an even layer. Bake in the oven for 15 minutes. Allow the oats to cool for about 5 minutes.
  4. Put the oat mixture into the food processor with cinnamon, nutmeg, and salt and process until smooth, scraping down the sides with a rubber spatula as needed. This can take up to 15-20 minutes, so be patient.
  5. If you’d prefer a thinner consistency, add the melted coconut oil and process for a few more seconds to distribute.

  • The texture of this nut butter is mostly smooth with a tiny bit of grain. If you like a chunkier, thicker, texture, you can process for less time.Honey can be substituted for maple syrup if you prefer. Still adds sweetness without the maple flavor.Pecans can be substituted for walnuts. You can also add seeds, such as pepitas or flaxseed to add to the health benefits.The oil is optional but provides a creamier texture. You can substitute olive oil or avocado oil if you don’t have coconut oil. Vegetable oil will work too, but the other oils mentioned are much better for you.This can be made in a high-powered blender, such as a Vitamix or Blendtec. However, I find it much easier to scrape down the sides (which is necessary as the mixture will splatter) in the food processor.Store at room temperature for 1-2 weeks, or store in the refrigerator for up to 1 month.EXPERT TIPS:Toasting the oats, nuts, and coconut in the oven brings out their natural nutty and earthy flavors. The heat helps to release the oils and intensify the aroma and taste, resulting in a richer and more complex flavor profile.The granola butter will become firm and harder to spread when stored in the fridge. To make it softer, warm it in the microwave for a few seconds, or allow it to come to room temperature on the counter before using.Ways to Use Granola ButterSpread on Toast, Bagels, Biscuits or Muffins. Use a drizzle of fruit dip. Smother on pancakes, waffles, stuff in crepes. Add to smoothies, milkshakes, drizzle on ice cream, yogurt, oatmeal. Bake into brownies, cookies, pies, quickbreads and more. Salad Dressing: Combine granola butter with olive oil, lemon juice, and your choice of seasonings to create a homemade salad dressing. Think of Thai Peanut Dressing.Sandwich or Wrap Spread: Use granola butter as a spread in sandwiches or wraps for a delightful crunch and unique flavor. It pairs well with sliced fruits, vegetables, cheese, or even deli meats.Granola Butter VariationsPumpkin Spice Granola Butter | ​Add pumpkin puree and warm pumpkin pie spices to make the perfect fall spread.
  • Salted Caramel Oatmeal Butter | Add a few drops of caramel extract or sauce and sprinkle in a pinch of flaky sea salt. 
  • Almond Coconut Granola Butter | Add ½ teaspoon almond extract and if desired, use almonds instead of walnuts.
  • Chocolate Oat Butter | ​Mix in a quarter cup of unsweetened cocoa powder or drizzle with melted dark chocolate. 
  • Maple Pecan Oatmeal Butter | Swapping the walnuts for pecans and maple syrup as the sweetener. 
  • Cinnamon Raisin Granola Butter | Add a little more cinnamon and 1/4 cup rough chopped raisins for a classic cinnamon raisin flavor. 
  • Very Berry Oat Butter | Give the granola butter a burst of berry flavor by adding 1/4 cup dried berries (I love using freeze-dried).
