Ingredients

  • 1.5 lbs small bagged golden potatoes
  • 2 TBSP olive oil
  • salt, pepper, and paprika, to taste
  • 2 TBSP Fresh chopped parsley to garnish optional

PUMPKIN SRIRACHA AIOLI

  • 2-4 TBSP pumpkin puree
  • 2-4 TBSP quality mayo (regular or vegan)
  • 2 TBSP Sriracha or to taste
  • 1-2 tsp lemon juice
  • pinch of salt
  • dash of paprika

SRIRACHA KETCHUP:

  • Sriracha + ketchup = happy dance

Instructions

  1. Pre-heat oven to 400 degrees F.
  2. Scrub potatoes clean, then cut each in half.
  3. Toss in a bowl with olive oil, salt, and pepper and toss to coat.
  4. Spread potatoes out on a sheet pan in an even layer and roast for 40-60 minutes, flipping them over with tongs or a spatula at the halfway point for crispier potatoes.
  5. While the potatoes roast, whisk together your sauce in a small bowl.
  6. Toss fresh from the oven potatoes with parsley and dive in!

Notes

  • For a Whole30 compliant sauce, swap out the Sriracha for your favorite hot sauce or try it with chipotle peppers in adobo - SO GOOD!
  • FEELING FEISTY? Feel free to experiment with your seasoning combos! Sometimes I keep it simple with salt and pepper and other times I combine sea salt, garlic powder, onion powder, and cayenne pepper for a fun and flavorful twist!
