Ingredients

  • 2 eggs
  • 2 tablespoons water
  • teaspoon salt
  • teaspoon ground pepper
  • 2 Whole Wheat English muffins split
  • 2 tablespoons pepper jelly
  • 2 thin slices ham ½ ounce. each
  • 4 slices tomato
  • ½ cup spinach leaves

Instructions

  1. In a medium bowl, whisk together the eggs and water.
  2. Heat a small nonstick skillet over medium heat. Lightly coat with cooking spray. Add the egg and scramble. Season with salt and pepper.
  3. Lightly toast the English muffins. Spread 1 tablespoon of pepper jelly on each English muffin.
  4. Divide the egg, ham, tomato and spinach between the English muffins. Serve.
