Garlic Butter Mushrooms

These mushrooms are easily sauteed and done in just a few minutes. They're buttery, garlicky, and full of savory flavor. Mushrooms are also full of antioxidants and nutrients. They cook up quickly, so be sure not to overcook. A few minutes is all it takes!

Ingredients

  • 2 TB olive oil
  • 2 TB salted butter
  • 4 cloves garlic minced
  • 1 shallot minced
  • 20 oz fresh mushrooms sliced (cremini or baby bella are great)
  • 4 TB fresh parsley leaves chopped (optional)
  • kosher salt
  • black pepper freshly cracked

Instructions

  1. In a large nonstick pan, add olive oil and butter over medium heat, until melted and hot. Add garlic and shallot, stirring until aromatic, about 1 minute. Add mushrooms and continue to stir, about 2-3 minutes or just until mushrooms are soft cooked through. Don't over cook.
  2. Remove from heat, add parsley, and lightly sprinkle with kosher salt and freshly ground black pepper to taste. Stir again and serve while warm.
