Pear Filling:

  • 3 lbs pears peeled, cored, and chopped
  • 1/4 cup coconut sugar
  • 2 Tbsp tapioca flour
  • 3 Tbsp water
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 tsp pure vanilla extract

Cobbler Topping:

  • 2 cups gluten-free all-purpose flour
  • 1/4 cup coconut sugar
  • 1 Tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 pinch sea salt
  • 2 Tbsp pure maple syrup
  • 6 Tbsp butter or ghee, melted
  • 1 cup full-fat canned coconut milk

Instructions

  1. Peel, core, and chop the pears and add them to a mixing bowl along with the rest of the ingredients for the pear filling. Stir well until combined and pears begin to sweat.
  2. Preheat the oven to 375 degrees F.
  3. Add the dry ingredients for the topping (gluten-free all-purpose flour, baking powder, sea salt, cinnamon, and coconut sugar) to a mixing bowl and stir well. Add the pure maple syrup, melted butter, and coconut milk and stir until a thick dough forms. Try to avoid over-mixing the dough.
  4. Transfer the pear mixture to a large 13” x 9” casserole dish and spread into an even layer. Drop dough over the pears, forming drop biscuits.
  5. Bake on the center rack of the preheated oven for 25 minutes. Lower the oven temperature to 350 degrees F and back another 15 to 20 minutes, until biscuits are golden-brown.
  6. Remove cobbler from the oven. If desired, drizzle additional melted butter over the biscuits. Serve cobbler with vanilla ice cream.
