Ingredients

  • 1 ½ cups rolled oats
  • 1 ½ cups protein granola (or your granola of choice)
  • ¼ cup dried cranberries
  • ¼ cup raisins
  • ¼ cup dried blueberries
  • ¼ cup salted papitas (or sunflower seeds)
  • ½ cup cacao chocolate chips (or semi-sweet chocolate chips)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 ripe bananas mashed
  • ½ cup peanut butter
  • ¼ cup honey
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 325 degrees and line a rimmed baking sheet with parchment paper. 
  2. In a large bowl combine all ingredients through salt and set aside. In a medium bowl add remaining ingredients and mix. Add the wet ingredients to the dry ingredients and mix to combine.
  3. Using a cookie scoop or your hands form dough into balls and place on prepared baking sheet. Flatten cookies as desired (cookies will not spread when baking). 
  4. Bake for 17 minutes. Let cool for 5 minutes on baking sheet then transfer to a wire rack to cool completely. Serve immediately or store in an airtight container.

Notes

  • You can freeze these cookies on a baking sheet and then store them in a zipper top bag in the freezer. Place the cookies in the fridge to thaw and serve at room temperature.
