Italian Meatloaf

Italian meatloaf is a delicious twist on the mid-century American classic. It’s a hearty dinner, or with leftovers that make amazing sandwiches.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 3 garlic cloves minced
  • 28- ounce can of crushed tomatoes
  • 15- ounce Can of Tomato Sauce
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • One full sleeve of saltine crackers use 1 1/2 cups crushed pork rinds for low carb
  • ¾ cup whole milk
  • 2 large eggs
  • 1 pound 80/2 ground beef
  • 1 pound sweet Italian sausage
  • ½ cup grated Parmesan cheese
  • ½ cup finely diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Worcestershire sauce 
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil to garnish

Instructions

  1. Preheat the oven to 400 degrees.
  2. Start with the sauce by heating olive oil in a large saucepan over medium heat. Add your minced garlic and cook for 1-2 minutes. Add crushed tomatoes, tomato sauce, crushed red pepper, and salt and pepper, and simmer for 5 to 8 minutes. Set aside.
  3. Place saltines in a large ziptop bag and crush with your hands or a rolling pin to fine dust.
  4. Mix the crushed saltines, milk, and eggs in a large bowl into a paste and let sit for 4-5 minutes to combine.
  5. In a large bowl, mix all remaining ingredients (except the mozzarella cheese and basil), together with the cracker past. Mix thoroughly.
  6. Transfer mixture to loaf pan linked with parchment paper and bake for 45 minutes
  7. Add sauce to the top of the meatloaf and cook for another 15 minutes 
  8. When meat reaches an internal temperature of 165oF, sprinkle it with mozzarella cheese, and broil for 3-4 minutes until cheese is melted and browning. Allow meatloaf to rest for 10 -15 minutes. Slice meatloaf and serve with tomato sauce and a sprinkle of freshly chopped basil to garnish.
