Kale and Mixed Beans Salad

Delicious, healthy and easy mixed bean and kale salad. Even the homemade dressing is super fast as well!

Ingredients

Servings
  • 1 15/16 ounces can of mixed beans rinsed and drained
  • 4 cups of washed shredded kale
  • 2-3 tablespoons finely diced red onion

Salad Dressing:

  • 1 teaspoons lemon zest
  • 1 tablespoons European style mustard like Brassica mustard with whole mustard seeds
  • 1/2 teaspoon garlic herb seasoning
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey

Instructions

  1. In a large bowl, add beans, kale and onion.In a small measuring cup, combine the remaining ingredients, whisking together thoroughly.
  2. Pour over the kale and beans. Mix in completely, covering all the salad.
  3. Place in the refrigerator for at least half an hour before serving. You can let this sit for a few hours while the dressing softens the kale leaves, the longer the better!
  4. Serve and enjoy!
