Delicious, healthy and easy mixed bean and kale salad. Even the homemade dressing is super fast as well!

Ingredients
- 1 15/16 ounces can of mixed beans rinsed and drained
- 4 cups of washed shredded kale
- 2-3 tablespoons finely diced red onion
Salad Dressing:
- 1 teaspoons lemon zest
- 1 tablespoons European style mustard like Brassica mustard with whole mustard seeds
- 1/2 teaspoon garlic herb seasoning
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 teaspoon honey
Instructions
- In a large bowl, add beans, kale and onion.In a small measuring cup, combine the remaining ingredients, whisking together thoroughly.
- Pour over the kale and beans. Mix in completely, covering all the salad.
- Place in the refrigerator for at least half an hour before serving. You can let this sit for a few hours while the dressing softens the kale leaves, the longer the better!
- Serve and enjoy!
