  • 6 cups spring mix or your favorite mixed greens
  • 1 English cucumber thinly sliced
  • ¼ red onion thinly sliced
  • 2 tablespoons slivered almonds and pepitas or your favorite nuts/seeds

Honey Dijon Dressing

  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar or red wine vinegar
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper

  1. Make the vinaigrette: In a small bowl or jar, combine all the vinaigrette ingredients. Add 1 teaspoon kosher salt and ground black pepper to taste. Whisk or shake well until fully combined. Taste and adjust seasoning if needed.
