Leftover Turkey Stir Fry

Full of veggies and noodles, this leftover turkey stir fry recipe is a hearty meal that comes together very quickly and easily! Perfect for using up leftover turkey, this turkey and noodle stir fry is so simple but delicious.

Ingredients
For the Stir Fry Sauce
- ¼ cup soy sauce low sodium
- ¼ cup honey
- ¼ cup orange juice
- 1 tablespoon mirin
- 2 tablespoons sesame oil
- 2 teaspoon cornstarch
- 1 teaspoon garlic powder
For the Stir Fry
- 1 tablespoon olive oil
- ½ yellow onion sliced
- 1 red bell pepper sliced
- 200 grams Snow peas
- 1 head broccoli cut into florets
- 1 pound cooked turkey sliced or chopped
- 355 grams noodles I used chow mein noodles
Instructions
- Combine the stir fry sauce ingredients and set it aside.
- In a large skillet over medium heat, add the oil and then the sliced onions. Saute for 2 minutes.
- Add the sliced red bell pepper and snow peas to the skillet and saute for another 2 to 3 minutes.
- Add the broccoli florets to the skillet and cook for another minute.
- Add the cooked turkey and continue to cook for another minute.
- Meanwhile, cook your noodles according to the package (mine only requires one minute to cook in boiling water).
- Add the cooked noodles and stir fry sauce to the skillet and toss everything to combine. Cook for at least 2 minutes to give the sauce time to thicken. Serve as is or garnish with some toasted sesame seeds and green onions.
Notes
- Start cooking your noodles accordingly! Since mine only take a minute in a pot of boiling water, I cook mine with a minute before adding it to my skillet. If you're using noodles that take longer to cook, make sure to start earlier.
