Vibrantly fresh and deliciously addictive! This is one of the best summer chip dips and a great way to use up fresh produce.

Ingredients
- 2 cups peeled and diced mangoes, (about 2 small)
- 3/4 cup chopped red bell pepper
- 1 medium avocado, diced
- 1/3 cup chopped red onions, rinsed in a sieve to remove harsh bite
- 1/4 cup chopped fresh cilantro
- 3 Tbsp fresh lime juice
- 1 jalapeño, seeded and diced
- Salt, to taste
Instructions
- In a medium mixing bowl toss together all ingredients.
- Season with salt to taste. Serve shortly after preparing (as the avocado will start to brown).
Notes
- *Use nicely ripened but not mushy mangos.
- You can make a day or two in advance (store in fridge), just wait to add the avocado until you are ready to serve so it doesn't brown.
- Serve with tortilla chips, over coconut rice, poultry or seafood, or serve over tacos, tostadas etc.
