For The Crisp:

  • 2 tablespoons almond meal
  • 2 tablespoons old fashioned oatmeal
  • 1 tablespoon coconut sugar
  • 2 teaspoons coconut oil at room temperature (should be like softened butter)

To Serve:

  • 1/2 cup vanilla Greek Yogurt
  • 1 large apple spiralized with the 3mm blade (i used fuji)
  • maple syrup for drizzling
  • cinnamon for garnish

Instructions

  1. In a small bowl, stir together the almond meal, oatmeal and coconut sugar. Using your hands, mix in the soft coconut oil until the mixture forms crumbs.
  2. Spread the crumbs in an even layer on a microwave safe plate, and microwave for 1 minute. Stir, and then microwave for an additional 15-30 seconds, or until the crumbs begin to go light golden brown. * The crumbs will not be crunchy yet. Place them into the refrigerator for at least an hour to let them get nice and crunchy.
  3. Once the crumbs are ready, spoon the Greek yogurt into a bowl and place the spiralized apple on top. Drizzle with maple syrup, a pinch of cinnamon and top with the crumbles.
  4. DEVOUR!

Notes

  • * This could take more or less time, depending on the wattage of your microwave. I use an 1000W microwave. ** If you want them to firm up faster, place them in the freezer. OR, make them up the night before (even make a few batches) and then they will be ready to go in the morning.
