Oven Roasted Carrots

Oven roasted carrots are an amazing recipe perfect for any occasion. It doesn’t matter if it’s a holiday feast or a weeknight meal, carrots are there for you, and with this simple oven-roasted carrots recipe, you can be there for them too.

Ingredients

  • 1 pound carrots washed, see note
  • 2 tablespoons olive oil
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon brown sugar optional
  • 1 teaspoon fresh thyme leaves optional.

Instructions

  1. Preheat oven to 425 degrees F.
  2. Slice carrots about ½ inch thick and 3-4 inches long.
  3. Place on lined baking sheet (see note).
  4. Pour olive oil, spices, and brown sugar over the carrots.
  5. Toss to coat evenly and spread carrots into a single layer.
  6. Bake on the middle rack in a preheated oven for about 25 minutes, tossing halfway, or until the carrots are tender and slightly browned.
  7. Sprinkle with fresh thyme leaves.

Notes

  • Adding the brown sugar is optional, it aids in the caramelization process.
  • Lining a baking sheet is also optional but it speeds up clean-up time. You can use foil or parchment. 
  • You can use baby carrots or slice larger carrots.
