Ingredients
- 2 cups dill pickles finely diced
- ½ cup vidalia onion finely diced
- ½ cup red bell pepper finely diced
- 1 tablespoon Jalapeño minced
- 1 clove garlic crushed
- ½ teaspoon salt
- ¼ cup pickle brine
Instructions
- Combine all ingredients in a bowl.
- Place in the refrigerator for at least an hour for the flavors to combine. Store in the fridge for up to 10 days.
Notes
- If you’d like to make mild pickle de gallo, you can leave out the jalapeno, or reduce it down to a teaspoon. If you’d like to make a spicy pickle de gallo, add 1 minced habanero pepper, in addition to the jalapeno.
